Over-consumption of “bad” highly saturated fats, low in essential fatty acids (EFA’s) results in fat deposition causing obesity and fatty degeneration. When “good” unsaturated fats rich in EFA’s are added to the diet, food utilization and energy production are enhanced and less fat is deposited.
